Spring is the season of celebration at Chrismont’s King Valley home, peaking with their now legendary long table Spring Feast, held this year on Saturday October 5 at their Cheshunt estate.
Spring Feast takes the King Valley experience beyond its Italian roots and into an international world of flavours inspired by the region’s produce, and its unmatched diversity of wines.
Chrismont is once again teaming up with chef, author and raconteur Matt Wilkinson from Melbourne’s Pope Joan restaurant to bring spring to life. Since their first collaboration in 2009, it has become a formidable partnership.
Host Arnie Pizzini of Chrismont says he is looking forward to seeing what Matt brings to the table.
“Every year, Matt pushes the boundaries a little more: the menu gets broader and the friendships grow. He has an innate understanding of King Valley and what we are doing with our wines.”
The strength of the relationship is a shared belief in seasons, flavour, authenticity – and accessibility.
“I build my dishes around vegetables in season,” Matt says. “It’s when they are the most readily available and, more importantly, taste the best.”
Chrismont crafts its wine styles to suit the diverse, multicultural cuisines found on Australian dinner tables, including emerging stars like prosecco, arneis, petit manseng, pinot grigio, sangiovese, tempranillo, and nebbiolo.
It will be a combination of these varietals – the Italian grapes King Valley is famous for; classical European stalwarts; innovative Mediterranean styles – and the readily available produce that will determine Matt’s menu.
“We like to wait until on the day to reveal the menu,” Arnie says. “All we want our guests to know is it will roll out over six courses with a few surprises, yet remain true to Matt’s style and attention and guarantee debate on which dish is the best wine and food match.”
Along with the food, there will be music, inevitable dancing, and winemaker Warren Proft’s entertainingly cryptic wine options game.
